Ingredients
2cups red lentils
1cup pumpkin puree
2tbsp canola oil
1large onion, chopped
4garlic cloves, minced
1carrot, chopped
1tbsp curry powder
1tsp cumin
1tsp hot sauce or chili peppers
8cups chicken or vegetable stock
¼ cup lemon juice (juice from 2 lemons)
¼ cup parsley

Heat oil in a pot large enough to hold 12 cups of fluids

Next, add the chopped onion and garlic and sauté for 2-3 minutes.

Now you can add the chopped carrots, red lentils, cumin, curry powder, chili flakes or hot sauce, salt and pepper. Stir and simmer for 10 minutes.

Finally, pour the broth and pumpkin puree into the pot. Cover and simmer for about 30 minutes, until red lentils are tender. They will fall apart and thicken the broth.

To finish, ladle into bowls and in each bowl, squeeze ½ tbsp lemon juice and sprinkle with ½ tbsp parsley.
