Homemade Pickled Red Onions: A Flavorful Boost for Gut Health and Fertility

Directions

  1. To begin, thinly slice the red onion using a mandolin or sharp knife. If you are slicing a lot of onions, wear goggles! 😁 You’ll thank me for it. 
  2. Now, wash and dry the glass jar with a tight-fitting lid and set aside. 
  3. Next, place the thinly sliced red onions into the glass jar. Be sure to push as many onions into the jar as you can. 
  4. Moving to the stove, in a small pot, combine water and vinegar, sugar and salt and bring to a simmer for 5 minutes.
  5. Remove from heat and add fennel seeds and peppercorns.
  6. Finally, pour the warm mixture into the glass jar and over the onions. Make sure to cover the onions fully with the liquid.
  7. Let it sit for 30 minutes.
  8. Enjoy or place in the fridge. These can be eaten for up to 2 weeks when stored in the fridge.
