Pumpkin Spice Latte Energy Balls

Ingredients:

  • 1¾ cup quick oats
  • 10 dates, pitted
  • ⅓ cup pumpkin puree
  • ½ cup cashews
  • ¼ cup pumpkin seeds
  • 2 tbsp honey
  • 1 tbsp pumpkin pie spice
  • 2 tsp instant coffee
  • ¼ tsp vanilla
  • Optional – dark choc. chips

Directions:

  1. First, blend all ingredients, except the chocolate chips,  until smooth. 
  2. Next, roll into balls shapes. 
  3. Add the chocolate chips by pressing them into each ball. 
  4. Last – enjoy 2 with a cup of tea. 

Should make about 10 balls.
