Wash and dry all produce.

Dice 1 pepper.

Grate the cheese.

Open the tuna and black beans.

Preheat the oven to 400F.

Cut 6 peppers in half, lengthwise, remove seeds and core. Place the open side up in a casserole dish and set aside.

Add the remaining ingredients, holding back 1/2 cup grated cheese, to a medium bowl and stir to combine.

Scoop mixture into peppers and distribute evenly.

Place peppers inside the heated oven and bake for 15 minutes.

Remove from oven, top with more grated cheese, and place back in the oven for 5 minutes, until cheese is melted.
