Description

This spicy pumpkin lentil soup is rich in fiber, iron, and plant-based protein to support hormone health and anti-inflammatory nutrition.

Ingredients

Instructions

  1. Heat oil in a pot large enough to hold 12 cups of fluids
  2. Next, add the chopped onion and garlic and sauté for 2-3 minutes.
  3. Now you can add the chopped carrots, red lentils, cumin, curry powder, chili flakes or hot sauce, salt and pepper. Stir and simmer for 10 minutes.
  4. Finally, pour the broth and pumpkin puree into the pot. Cover and simmer for about 30 minutes, until red lentils are tender. They will fall apart and thicken the broth.
  5. To finish, ladle into bowls and in each bowl, squeeze ½ tbsp lemon juice and sprinkle with ½ tbsp parsley.
  6. Serve immediately and enjoy.
